Description

The Ultimate Conical is designed to be the fastest cooling conical fermenter we have ever made! There are two cooling blocks strategically positioned on the outside of the cone with no internal contact with the beer. The cooling is extremely gentle on your yeast, changing wort temperatures at about a degree an hour. It can get to and hold your ale fermentation temperatures of 65-72 Fahrenheit at ambient temperatures of up to 120 Fahrenheit. In addition, this fermentor can get to and hold lager fermentation temperatures of 45-50 Fahrenheit all the way up to ambient temperatures of 100 Fahrenheit. With the added heating option, you will be able to control the temperature of your fermenting beer to within 1 degree, any time of the year. The included Dual-Stage Controller will simultaneously control both the cooling units and the 40-Watt heater. The domed lid has it's own cover, made from our heavy-duty foam insulation, for better temperature control.


Cooling is made to work with 10 to 11 gallon batches.  Please note that when dropping temperature, your fermenting wort will contract and may pull liquid from your blowoff bucket into the fermentor.  This may also occur when dumping trub from the bottom port, or when racking from the racking arm.

Not Really 14 Gallons
I bought this fermenter last week and was doing an initial cleaning today in preparation for brewing Saturday. When I bought the 14 gallon unit I was under the impression it would hold 14 gallons to the top edge of the unit. It actually only holds twelve gallons to the lip. If you are planning a 11 gallon brew and want to add a large starter (4litres say) it does not leave any room. I would have been happier with the actual 14 gallons of space. Everything else seems to work fine - temperature control etc. For the price everything should work well though. I think purchaser should know exactly what they are getting. I would be interested to hear others feed back on this issue.

Update from previous review
Update on my previous review, following my first 12 gallon batch of Bohemian pilsner. The cooling capacity of the unit is pretty impressive; at the end of the 50? ferment I did a diacetyl rest at 65? then turned the controller to 40? to drop the yeast. The unit was able to cool to 41? overnight and hold it with ambient temp of 83?. For my next batch I will lose the supplied sample valve and replace it with a standard ball valve, which will make it much easier to regulate flow when pumping closed from the chiller into the fermenter.

Works as advertised
I was a little skeptical about the ability of this fermenter to cool lager wort effectively in the high ambient temperatures of southern Mississippi summers, but I am a believer now. I filled mine with 12 gallons of wort yesterday evening at 84? and this morning it is stable at 48?. The ambient temp was 88? when I filled it up.

The unit arrived well packed, but like Todd E I had quality control issues: one of the 4 power supply bricks was a dud. Support did send me a replacement in a timely fashion, but is it too much to ask that when purchasing a high-dollar item like this that its components be tested before shipping?

Certainly an expensive product, but for those who can save up the cash, will take your brewing to a new level. Maintains completely closed system with no O2 exposure during transfers, prefect temp control, etc. The list goes on and on. The Ultimate Homebrew toy.

Incredible
This is an amazing conical fermenter. Keeps temperatures well within the claimed specifications. I don't really know how the cooling works so well, but it easily cools wort down to lager temperatures, in a garage on a hot Southern California summer day, where temperatures can easily be above 90 degrees. Heating is just as efficient. Although it was unnecessary, I added a second heating pad to the unit, making the heating even more efficient

Only one issue so far.
After many successful batches, I had one go bad, undrinkable bad.
Turned out to be the silicone gasket for the lid was contaminated beyond repair. The funky chili/bell pepper smell could not be cleaned or cooked off. A new one was almost $40.
I love this thing though, it's been worth the price to me.

Craig's list Purchase
Bought mine off of craig's list; it looks to be around 2 years old.

I would agree with the original post that the racking arm would benefit from another 1/4-1/2" or so of extension but it is a non-issue once you've used it a time or two. I can see on my unit where the original owner had trouble attaching his tri-clamp fittings to the side racking arm and dented or slightly tore the foam on the cone....user error. You just have to pay attention to the direction of the tri-clamp when attaching.

Most importantly - Fermentation:
I have had zero issues. This is a beast of a machine. I have fermented over 20 batches (all 10+gal) from warm saison's in the winter where the heater was needed to keep temps over 75-80 (ambient around 40 at night) to Lager's fermented at 48F steady - during the peak of summer with ambient temps over 80-100F. My conical resides in the garage where temperature swings are greatest; but I can attest my beer NEVER fluctuates outside the parameters I have entered in my digital controller.

It is recommended to ferment 7+ gal at a time as you have better contact with the cooled sides of the conical and a larger mass that tends to keep a more constant temperature...thus your fans won't have to work as hard.

How to Use your Conical and Harvesting Yeast:
1) After filling your conical with fresh wort - WAIT to pitch your yeast.
You should dump trub first. I suggest waiting anywhere from the bottom 20-45min (or longer) before dumping trub out of the bottom butterfly valve.

**Dumping trub - MAKE SURE THE BLOW OFF TUBE IS NOT IN THE BUCKET OF WATER / SANITIZER. Next put a 5 gal bucket under your conical (i have the extension legs) and open the (very bottom) butterfly valve about 1/4 to 1/2 way open, be prepared to close quickly as it goes fast. Keep opening/closing until you see clear or at least semi clear wort coming out.

2)If you're not already at pitching temp - Let your conical finish off the cooling, down to your optimal pitching temp (65-68F for most ales) and (48-50F for most lager yeast)

3)Pitch yeast

**Side note: Depending on the style of beer (Non-IPA's) / APA's) I will often cool my wort down below critical 140F and transfer my wort to the conical with it still 100-120F; I go to bed and wake up with my wort at 68F. I dump the trub and pitch the yeast. This also allows me to use the last runnings from my grain to make a 2-4L starter that can be pitched the next day.

4)Take hydrometer samples from your side racking port (the valve just above the larger bottom valve) until you reach Final gravity (FG) -varies by yeast strain and initial wort. Typically a FG is assumed complete when 3 days have passed without any drop in gravity.

**Tip: Warm your conical 4-6 degrees F after day 3-4 of fermentation (for ales) to help ensure a more complete fermentation (lower FG)

5)Once FG is reached, unplug the heater and set your cooling point on your digital controller to 50 degrees F. Wait 8-24hrs longer is better.

Harvest Yeast!
6) Before harvesting, PULL THE BLOW OFF TUBE OUT OF THE SANITIZER BUCKET; spray sanitizer up on the bottom butter fly valve
7) There may be a little more trub; just do one extra mini dump before you get your sterilized jar ready. Open the valve VERY slowly (if the trub gets stuck wait a minute if absolutely needed take a sanitized spoon and jab it quickly). with a bucket underneath until you see pure white coming out.
8) wait 5 minutes (longer may be better)
9) Place a sterilized glass jar (pint sized works) just underneath the opening of the bottom valve. With one hand very slowly open the dump valve 1/4 of the way open, while holding the glass jar in the other hand. You should be able to catch all of the pure yeast goodness. Fill to the very top (no air is better)
10) place yeast in fridge (never freeze) and keep until your next brew day. Yeast can be used without a starter for up to 2 months. Any longer and a starter is recommended. Internet Search Mr. Malty's yeast calc for more yeast pitching tips.

Finally easy temp control
I got this as the last real control point in my pipeline, and as a trainer for a real commercial conical when I put together the nerve to go pro. Like every piece of gear there are nits. I agree with much of the last review, but the Ultimate has exceeded my expectations.

I have pulled 4 batches now, including a great IPA at 64F, a Belgian Wit spiced lightly at 68F, and a Honey Saison in right now at 80F. Such fine temp controls have made my beers better, plus I love the toys... The yeast harvester is nifty, and I have been able to recover specialty yeast, but need more experience to get cleaner trub-free yeast cake.

Cons, cables and cords are everywhere. The system can used a better cable management system. The foam rubber insulation can be a bit hard to work with the tri-clamps, but you get used to it. It also took some time to get used to the lid fastener and get the right seal.

The leg extensions and casters are awesome. Easier access to racking and dump valves. A little tipsy when empty, but plenty stable when full!

Overall pleased so far....
Received the fermenter about a month ago. Assembly went smoothly after watching the video and reading the documentation. I have been brewing all grain complex and simple recipe beer for quite a while. I have a Blichmann TopTier and Tower of Power, two conditioning freezers, and am in the process of business plans for a NanoBrewery. I do not know as much as many but more than many, so you can take this with the proverbial grain of salt.

Quality: The fermenter itself seems quite sturdy. I had read negatives from the Sabco site about conicals including a reference about being top-heavy on extension legs. So far, I think the 14ga Ultimate is OK with the 15" extensions. I take things with a grain of salt, and realize other people are selling other things..... so bottom line..... I am happy with the conical in terms of stability and build. Except.......

First issure - The foam insulation is lacking. I can see it needing replacement in a year or two even though I am . . . OH SO gentle about tightening TC clamps, etc. Solution - more space for the TC clamps to be tightened = extend the welded TC fittings so they extend just a little more from the vessel so that tightening the TC clamps does not damage the foam.

Second issue - the controller supplied was a dud. Briefly plugged the unit in after assembly (like 5 sec.) just to make sure the power strip and everything powered up. It did. Brewed a 6 ga. batch of beer only to have the fans come on for about one second and then stop..... the temp control not work. I have two Johnson controllers and one Ranco keeping my brewery freezers at the proper temperatures. I have had wires come loose inside the controllers and opened them up to find the problem. This one simply was a dud. Fortunately, support was very responsive and sent me another controller post haste. My issue..... I used to build computers for people in the 80's and 90's. I would never sell / deliver something that had not been "burned-in" or tried out for at least 24hr. My computers, as I recall, were quite a bit less expensive than this $2500 fermenter.... you get the picture.

Third issue - the yeast harvester is not intuitive! Supply some darned instructions in addition to the weak video online. Yes, I am educated and able to "cipher"... in fact, I am a doctor, a surgeon that loves brewing beer. I do home repair, woodworking, am well versed in photography and constructed all 11 computers and the server for my office. Yet..... here's an opportunity for you....... even a vacuum cleaner or toaster has some do's and don'ts. They're usually well outlined in the INSTRUCTION BOOKLET. Give people an outline of the parts and how to use them. Heck, even give some suggestions on storing yeast or at least a couple of links to web pages that do so. Fortunately, I am not afraid to ask questions of master brewers, the LHBS, or anyone else - even Google to find answers. Though, in the best scenario, I shouldn't have to.

Fourth / Last issue - cooling. I am in Texas. Not too cool most of the time. It is February, however. 60's in the daytime and 40's at night. Keeping my lager around 50-55 has not been an issue, but the fans are working a lot if it gets above 70 on any given day.
Bottom line - Peltier cooling 10ga might be an issue if it's 95F outside and 100-105 in the garage. I think the statements about cooling ability / advertisement on the Ultimate Conical's description might be overstated. I admit I haven't been there yet. Just my observations thus far.

If you want a quality built conical, there are options. You may even be able to get a glycol cooled 10-15 ga conical for a similar price. I have had a few glitches and observations, but am happy so far. I am an active member of homebrewtalk if anyone wants more info. If this positive review (with exceptions) does not appear here, it will in other forums.
