Remember your parents scaring you with "Be careful of firecrackers, they can explode in your hand!"  Well let us warn you right now... our new, juicy M-80 IPA is going to explode in your mouth. It's going to be crazy. Flavors going everywhere. Maybe your parents would tell you to use caution and not to make this beer. But you're grown up now, making adult decisions (most of the time), and we think you've earned the right to buy a beer kit with a fuse and a lighter. With a slight smile and a wink of the eye, we say "go ahead... have some fun".

Let us tell you about the inner workings of this bomb. Sure it has big IPA malt, but you want to know about the hops. It starts with an unreasonable amount of Simcoe®, Columbus, and Centennial hops. By themselves these are all explosive hops, but together they combine to bring true, huge IPA hop flavor.  Because of the similarity of hops, one MoreBeer! staffer dubbed it a mini "Pliny The Elder... but with orange". High praise indeed.

Did you just say Orange? Well done sir, good paying attention. What really sets this IPA apart from the masses is that the recipe calls for you to cut up and add three fresh oranges into the fermenter. Crazy? We thought so. But that is what we love about our Signature Series of Beer Kits, a selection of crazy, unique beers that really stand out. M-80 IPA was designed and created by your fellow homebrewer, Carlos Musquez. We do admit he went a little AWOL on this kit and into uncharted territory, but we love a rebel.

You will need to supply the three fresh oranges... we'd ship them to you, but they would get a little squishy.

Is it better to put the oranges in a bag or just dump them in?

BEST ANSWER: IMHO, I've had great success with zesting the oranges a few days before, then puree the rest of the orange. If you freeze with a little bit of non-flavored alcohol like vodka, that will ensure that any bugs are sanitized before adding. Finally, get a hop spider - this is well worth it - I stick all of the puree and zest into the spider, screw on the lid and then drop right into the keg. I know it sounds a bit risky, but the flavor and aroma you can achieve is outstanding - certainly better than anything you would get from adding to the boil or fermenter.
I am growing some very nice little Calamondin oranges. They are perfect oranges but extremely tart/sour. Should I use them in this recipe? Is there a way to dial back the sour?

BEST ANSWER: I found that the zest (citrus oils) from the peel contributes more orange "essence" than the meat of the fruit. Any sugars in your oranges or a sweeter orange will be consumed by yeast anyway. Be sure and remove / avoid as much of the white pith (rind) as possible to minimize any bitter contribution.
M-80 with kveik yeast

The directions say to add the oranges after 2 days of fermentation. As I am using kveik yeast, it will be much further along into fermentation than a standard yeast would be.

Does this change the optimum time to drop in the oranges?

BEST ANSWER: I did the same thing with this beer. I put them in 24 hours after I pitched the yeast, and it came out great.

Enjoyable IPA
I didn't fully read the description before ordering this kit, so I was surprised that I would have to include oranges to the fermentation. I ferment in corney kegs so I try to avoid adding fruit during fermentation. Having said all that you do get an ever so light orange/grapefruit on top of the otherwise great IPA.

Stainless Hop Tube (remove the cotter pin on top it will rust.. rest is good)... deep bitter goodness.

Very tasty!
This came out great with US-05 yeast and some valencia oranges. Definitely in the top 5 of beers I've ever made. It has a decent hop profile and is full bodied. The orange isn't "in your face" overpowering the other flavours - instead it is a perfect compliment. This may have replaced the Citrus Bomb IPA as my favourite morebeer.com all-grain kit, and it's 20% cheaper to boot!

Good brew, need to be more careful with zest.
This beer generated some great flavors with a malty backbone and citrus highlights, but I was left with a lot of bitterness on the backend. I had used some fresh zest from the oranges and perhaps went a little overboard here.

I'd make it again but cut back on the amount of zest I add.

My favorite MB kit
I've brewed this a few time using the Grainfather and have had total success. I've dry hopped and added grapefruit , orange and lemon zest and without any fruit at all and it's always delicious. My favorite More Beer kit.

Well balanced and tasty...
Brewed M-80 IPA using Wyeast 1056 and used three oranges and zest exactly like directions dictated. I soaked the oranges and zest in vodka for an hour or so and added to secondary for two weeks. After bottling I waited a couple of weeks before tasting as directed and I truly love this beer.

The added sweetness of the oranges balances the bitterness of the hops and zest perfectly in my opinion. This is by far one of my favorite IPA's I have brewed.
