Description

A specialized, pre-liquefied Gum Arabic preparation; Keller's Liqui-Gum had notable positive impacts on color stability, mouthfeel and iron turbidity in young wines. Liqui-Gum has also been shown to improve the quality of the carbonation (mousseaux) and mouthfeel in sparkling wines when added to the wine during the secondary, carbonating fermentation. Liqui-Gum should be added either just before or just after the final filtration and bottling of the wine. As an added key feature, the Liqui-Gum preparation that arrives to you has been pre-filtered in the factory and is certified to leave filter media down to 0.45microns clear and unclogged. Color Stabilization: 0.5-0.8g/L (2.0-3.2g/gal)

Protection against Iron Turbidity: 0.5-1.0g/L (2.0-4.0g/gal)

Mouthfeel & Flavor Impact: 0.5-1.5g/L (2.0-6.0g/gal)

*Note: Once opened, the package should be sealed tightly, stored in a cool, frost-free environment and used within 6 - 12 months. However, if there is no sediment at the bottom of the bottle, you may prolong the expiration until such sediment begins to form, at which point it must be tossed.

BEST ANSWER: The instructions are posted on the website for this product. You should always do bench trials if you don't know what the outcome that you want is. I have settled on 1g/L for mouthfeel on whites. I don't use it on reds. 1g/L is the same as 1ml/L. Here are the instructions that come with the product on the website. I'd suggest you read these.

Is this essentially the same as glycerin?

BEST ANSWER: No, they are different materials. Gum arabic gives mouthfeel to the wine while Glycerine gives body but also sweetens the wine.

Perfectly Smooth Wine
I used 0.5 mL/L of this in Pinot Noir to smooth out tannis and it worked perfectly without changing the flavor. The one drawback is doing bench trials because it takes so little of the Liqui-Gum that drawing micro-liters requires expensive pipettes. So I used a higher volume of wine (one liter) to do the bench trial. Also, there were no instructions on dosage. It took quite a bit of research to find the dosage range of 0.2 - 1.0 mL/L. However, the "normal" dosage range is closer to 0.5 - 0.75 mL/L.

Bravo!
I like it so far. Be sure to perform bench trials because one size will not fit all. It worked wonders for a barrel aged juice pail I made. Juice pails are eh to begin with, and after time in the barrel it was great but a little thin. This gum Arabic gave it some nice body and almost convinced me this wine wasn't from a juice pail. Cheers
