71B is a specialty wine yeast strain selected for its exceptional ability to produce fresh, aromatic wines with enhanced fruit character and softened acidity. Originally developed for Nouveau-style wines, 71B is particularly well-suited for early-drinking reds, rosés, and fruit wines where the preservation of bright, fruit-forward notes is desired. This strain is also known for its partial metabolism of malic acid, resulting in wines with a softer, rounder mouthfeel.

Cyzer
I have been using this yeast for a few years for my cyzer. It provides predictable results. I always re-hydrate along with Go Ferm Protect.

8g - Repackaged by Cellar Science
The 8g pack has been repackaged by Cellar Science. It says to use within 6 month and there is no packaged date or best by date on it.

Mead is not fermenting, most likely this unlabeled bag is old. I bought it less than 2 months ago.

Get the 5g package instead, it is probably the official packaging by Lalvin and will last longer.
