Description

One fourth as sweet as cane sugar (sucrose) and non-fermentable by yeast. Use lactose when you want to sweeten a dry or bitter wine or beer. Also used to add sweetness and body to beers such as sweet stouts (milk stouts). Add a small amount, mix, and taste. Lactose can be added until desired flavor is obtained. There is no fermentation period or rest needed, so wine/beer may be bottled immediately. Add to hot water and mix thoroughly before adding to wine/beer. Add at end of fermentation, before bottling.


Usage: 8 oz. per 5 gallons, or to taste

BEST ANSWER: I can't say for certain but i would think so. It is a nonfermentable sugar. My concern would be that it might leave a flavor that is probably not compatible with cider. The alternative for sweetening cider would be to stabilize it (i.e. kill the yeast) then use something like honey.

I love the fullness and back sweetening this gives to multiple styles of beer... stouts, cream ale or anything that finishes too dry.

Cream Ale necessity
I always use it in my Cream Ale, especially my Vanilla Cream Ale. IMO, adds that certain, something, extra.

As we all know lactose = unfermentable milk sugar, so normal brewing yeast will not convert lactose into alcohol (not so sure about Brett, el al).

Adds a bit of sweetness to the Cream Ale, I always use.

I used it for back sweetening.
I used this to get a slight creamy flavor while back sweetening a batch of Chocolate Mead, .It gave it a nice creamy flavor on the finish.
