Description

  • Inspired by Founders Canadian Breakfast Stout®, this kit combines our All Out Brunch Stout recipe with an addition of maple syrup and Canadian whiskey-soaked oak chips
  • Includes Nugget and Willamette hops
  • Estimated ABV: 7.5%
  • Estimated IBUs: 60
  • Makes 5 gallons of finished beer

Only a hoser would pass up the chance to brew a stout influenced by the Great White North. Similar to "All Out", this recipe combines a variety of dark malts, cacao nibs, and ground coffee for a remarkably rich flavor profile, and then takes it to new vistas with an addition of maple syrup and Canadian whiskey-soaked oak chips. The maple syrup and oak chips are added to simulate the barrel-aging process used for making Founders Canadian Breakfast Stout®, or "CBS". The result is a deeply complex stout that would have Bob and Doug McKenzie swearing off Elsinore beer after one sip. Not to cause a kerfuffle, but patience is key when brewing Sorry Aboot Brunch Stout. We recommend conditioning the beer for 2 to 6 months after the oak chips are added. Best enjoyed in your favorite tuque with a box of Timbits.

Please note: this recipe calls for 2 oz of Kona and Sumatra coffee grounds, 16 oz of Maple Syrup, and 1 cup of Canadian Whiskey, which are not included in the kit.

  • Makes 5 gallons
  • Estimated Original Gravity: 1.078
  • SRM (Color Range): 40+

Amazing
I just brewed my second batch of the Sorry Aboot Brunch Stout and can't wait for it to be ready.

My first batch turned out excellently. Added some decent quality maple syrup with 10 minutes left and used Peet's Sumatra for the flameout coffee addition and Thunder Mountain Kona for the secondary fermentation addition.

I used 3 packets of the CellarScience Cali yeast, fermented at 68F for 6 days, then 70F for 5 days. OG was 1.086, FG was 1.015. After it was done fermenting I put the oak chips and cheap Canadian whiskey (after 2 days of soaking together) and the Kona coffee (cold brewed for about 18 hours) into a keg.

I tried it about 2 months later and it was pretty good. 6 months after starting conditioning, I transferred it to another keg to get the stout off the wood chips and tasted it about a week later. Amazingly good, smooth flavor with a tasty coffee and chocolate taste and aroma.

Highly recommend this kit if you are a fan of Founders Breakfast Stout or their KBS. I don't know how it compares to Founders CBS since I have not been lucky enough to try it, but this kit is awesome.
