Just like Mum used to make
I purchased this kit with the recommended English WYeast and brewed following my usual technique.
Start the yeast the night before
Clean like a mad chemist
Steep the grains at 154' F
Sparge from the HLT at 168' F
Boil and follow the hop addition schedule to the minute
Primary 1st week at 66' F
Secondary 2 weeks at 68' F with dry hop and oak chips
Diacetyl Rest 1 day at 70' F
Crash down 5' F each day until at 35' F then rack it off
I only used 1/2 of the oak chips as I found with the Firestone Walker DBA kit the entire contents gives it a bit too much oak flavor for me.
It turned out amazing in fact I am on the site right now to order it again! This one tastes just like my Mum from Kent used to make when I was a wee lad.
Let there be no doubt, this is a traditional English IPA not the new West coast IPA with 75+ IBU.
