This German-style Wheat Beer has a lovely blond color and distinct hazy appearance in the glass. The flavor for German Hefeweizen is primarily based on the flavor of the very specialized Hefeweizen yeast, so be sure to select one of these strains for fermentation. Just be ready for a vigorous fermentation! This beer is known to pop off airlocks if there isn't enough room in the fermenter. This is a true German-style Hefeweizen recipe using 60% White Wheat malt and 40% 2-Row malt. A dash of Northern Brewer hops provides just enough bitterness to balance the malt and yeast character. Despite the simple recipe, this is one of our most popular ingredient kits. Our German Hefeweizen is a customer favorite that has brought home many ribbons.

If you want to put a little spin on this recipe, add 8 oz of Caramunich and 4 oz of Chocolate malt to make a Dunkelweizen!

How much priming sugar? My first batch is in the fermentor but I'm wondering how much priming sugar to use when I bottle? In the ordering form, it shows both 4 and 5 ounce options, I ordered the 5 ounce but wasn't sure if I should only use 4 or use the whole 5. I ended up with about 5.5 gallons going into the fermentor so I suspect I will have 5 gallons or a bit less after fermenting. Any suggestions?

great German Hefeweizen
I brewed a Paulaner Hefeweizen clone once and it the best Hef that I ever made and it was from dry extract with liquid yeast.
I just drank my first glass of this and it is just as good.
All grain kit with Munich Classic dry yeast (way to hot to ship liquid not). I started with RO water and used water adjustments based on Brewfather. I fermented in my SS Brewtech Unitank with Glycol chiller at 68F for most of the time them when it was close to final gravity I dropped the temp by 1 degree a day then shut off the blow off valve after 3 days. The psi came up to about 7 psi and I left it there for another 3 days then crashed and kegged. Carbonated for 3 days and just poured my first glass today. The balance between clove and banana was perfect. I was pleasantly surprised because I was afraid that it was going to be a banana bomb based on samples taken before I kegged it.
I am gong to do the dunkel heffeweizen next but will do this one again real soon.

Very nice Hefeweizen
Kit came fast and made a great Hefeweizen. I chose the Wyeast WY3068 Weihenstephan Weizen Yeast. This gave the hefeweizen a nice light clove banana wheat flavor with a drier finish.
If ordering the yeast, being a liquid that needs to be kept cold, order with the coldest option. I ordered with a cold pack and insulated pouch, both items were warm when arrived at my house; good thing I was brewing that day.
If you are a beginner to all grain, directions are lacking and somewhat confusing since they are made for extract brewing.

This was an absolutely fantastic Hefeweizen, it was almost indistinguishable from Paulaner. Very popular with friends and family and visually indistinguishable. My only complaint as a brew in a bag Brewer is that I need to mash longer or remill the grains in order to increase efficiency. Absolutely fantastic and I will certainly buy this again. Follow the directions and you'll look like a pro.

I have brewed the extract version of this kit many times, and every time it came out perfect.
The all grain came out a little thin and lacked flavor.
This could have been brewers error during steeping, but we will see next time I brew it, which it will.

Pair This With Omega Bananaza
I figure this would be pretty awesome with most of the suggested yeasts. I initially chose the dry yeast but came back and got the new Omega Bananaza yeast. The airlock smells heavily of bananas. The final product tastes of banana's but its more so that the clove flavor is completely missing.

I don't think you can go wrong with this kit, but I suggest giving the new yeast a try.

Some helpful tips!
The all-grain version of this kit makes awesome beer. The ingredient list looks simple, right? Only one small hop addition, two grains, and one yeast. And it is simple. However, the details are very important if you want to maximize its potential. Here are some pointers.

First: if you're going with a dry yeast, ignore the dry yeast recommendation in the kit instructions. The dry yeast that is going to make the most of this kit, as of 2021, is the "Munich Classic" yeast by Lallemand. This "Munich Classic" strain is a different yeast from the plain "Munich" yeast, and it's very closely related to the "Weihenstephan w68" strain that's used in the world's best hefeweizens.

Second: If you do use the Munich Classic dry yeast or one of the liquid W68 strains, you can brew this warmer than suggested and the yeast performs great. I fermented it without temperature control at 62 F ambient temperature (the side of the carboy measured 72 degrees during the peak of primary fermentation!) and got a nice, well balanced flavor. The main thing to be aware of if you do let it ferment at 72 is that this yeast is a powerhouse mega beast and will blow your airlock out with great fervor. Use a blowoff tube for the first few days until the krausen settles...don't even try using an airlock before then. Use a larger fermenter than you think you need... my 5 gallon batch in a 6.5 gallon carboy still blew foam out of the blowoff tube.

Third: If you're using the all grain kit, wheat can be a bit tricky to mash. If you use the standard "60 minute mash" approach, you're likely going to have low efficiency, especially if you don't sparge. Hefeweizens are usually decoction mashed in stages which can help with efficiency, but instead of going to all that trouble, you can instead try a longer mash (90 minutes, for example). Use a mash paddle or a big whisk to really give the grain the business. If you batch sparge, let it sit for longer than you usually do. Measure your wort's gravity after the first batch sparge and if it's lower than expected, do a second batch sparge and boil it all down to your target volume. You'll get it to work.
