Cascade is the classic American hop that really started the hop craze. Defined by its citrus, and often more specifically, grapefruit flavor it is now sought out around the World. It is a true dual purpose hop that can be used for bittering, at the end of the boil, or the fermenter.

Due to Cascade's overwhelming popularity, it is now grown in several countries. This German Cascade comes from the Hallertau region. German Cascade is similar in flavor and aroma to the US version. In a study done comparing German grown and US grown Cascade, the German Cascade was found to have higher levels of polyphenols and esters, whereas the US Cascade had higher levels of linalool. This means that the US version is more citrussy and fruity and the German version demonstrates more typical "hoppy" flavors.. A less intense bitterness was perceived from the German grown crop. The American Cascade is more intense and sharp when compared to the softer and more harmonious German interpretation.
