Premium, Fire-Toasted Oak Cubes from Stavin

Medium Toast French Oak will impart flavors of coconut, vanilla, cinnamon and chocolate.

These fire-toasted oak cubes are as close as you can come to the full range of flavors you would get from aging your beer in a full sized barrel, unlike convection-toased cubes. 

The difference is that convection toasted cubes are made by cutting the stave to size, then passing the small cubes through a toasting chamber. Stavin fire-toasts their staves whole, just like they would when making a barrel, and then cuts them down to size. The result is a gradation of toasting from the surface through to the center of the cube, where each different toast level represents a different flavor set that the oak will give your beer. The result is a much more complex and natural profile; by comparison convection toasted cubes taste one dimensional.

Oak cubes also release their flavor into your beer more slowly than chips, giving you more control over the final degree of impact in your beer. You should plan on an extended aging period of 1-6 months when using cubes. This longer contact time again promotes flavor complexity by allowing all the flavors of the oak and your beer to marry.

Recommended Dosage is 2 oz per 5 gallons for impact equivalent to aging in a brand new oak barrel

BEST ANSWER: At first blush it appears the StaVin is a brand name for a specific process of toasting. The price point for 1 # is just about double. It also appears the flavor(s) to be imparted differ slightly.
Will these cubes fit through the neck of a glass carboy?

Yes, they will fit. From my memory, the causes are roughly 1/3 to 1/4” on a side.

BEST ANSWER: The medium has a mellower toast. The flavor it imparts is less smokey and more a vanilla taste. I prefer medium to medium+
Will these cubes fit in the stainless tube for barrels?

BEST ANSWER: These cubes are 1/4-3/8 inch cubes or rectangular cubes. If you are asking if they will fit through the bung hole in a barrel, the answer is yes. I usually tie them up with cheese cloth and a string or with one of those bags brewers use for hops. I attach a string so that I can pull the cubes out after my wine has enough oak flavor.
I'm wondering, how old were the trees at time of harvest? Or at least, what diameter? I understand that French oak needs more time to fully mature than American oak, ideally at 100+ years age for French.

Barrel-like flavors.
All the cubes are great as I have had excellent results. Very slow process of pulling out the softer characteristics of the named wood. I will start my second year using these cubes.

Excellent oak products
Very easy to use and easy to work around when racking. Doesn't leave behind sediment to clog anything up. I use these for my smaller carboys (1 or 1/2 gallon) when I have a bit more wine that will fit in my larger carboys (which I use Winestix with).

Depending on varietal, I add these along with starting malolactic fermentation, then when malo is done I soak them with an SO2 solution while I transfer wine from malo to "aging" carboy, then rinse with purified water and place back in the new carboy for another several months (total about 3 to 4 months).

Easy to use. A couple years back I didn’t think I was getting oak flavor so I doubled up on the recommended dosage....Ha...yup huge oak in that wine...take my advice and stick with the recommended dosage...it works fine.
