Description

The legendary Frank Ellis, Grandfather of our Signature Series Kits, brings you his over the top Pale Ale with an amazing 7 oz of hops and 9 lbs of malt extract. It has the malt, alcohol and hoppiness of an IPA but the bitterness of a Pale Ale. Frank started with our American Pale Ale II, KIT250 – but this wasn’t enough flavor for Frank. So he added one pound of malt extract, more finish hops, followed by... yet more finish hops! The resulting flavor is malty with plenty of hop flavor, courtesy of the copious amounts of Cascade and Willamette hops. One day while  on the phone placing an order with us, Frank got tired of having to make these additions to our existing KIT250 so he asked why he couldn’t have his own kit to cut down on confusion. He was absolutely right!  So the series was born! When you are drinking any of the Signature Series recipes, raise your glass and give a virtual cheers to fellow homebrewer Frank Ellis in Missouri for the good idea. Frank has brewed his own kit an amazing 62 times over the last decade! Frank recommends using White Labs California yeast, WLP001 or Wyeast American, WY1056.

Perfect summer beer for those who like to taste the beer.
I make opaque stouts in the winter, but I like a lighter, but not light, beer when it is hot outside. I come back to Frank Ellis's kit time after time. I do make my own labels, however, which call it "Dan'l's Perfect Landing Triple-Hopped Ale" with a picture of a skydiver under canopy.

A Superb
I'm not sure if it is correct to call it a Pale IPA, but I think the shoe fits and I'm going to wear it. I'm certainly going to keep brewing it.

I find that many Pale Ales are a bit too boring for my tastes. I also find that IPAs tend to be all about the hops to the point that the malt character is an afterthought. The Frank Ellis Recipe brings out the best of both worlds and gives you substantial malt and mouthfeel to go along with a nice bite that lets you know there are some hops in there.

I aspire to have a kit named after me someday, but until then it is my honor to honor Frank and his lovely Pale IPA.

So much hops, but little bang
With 7oz of hops you would expect a lot more of a bang from the profile. It came out a bit sweet tasting from the honey malt combined with being an extract brew. I would recommend adding some gypsum if your water isn't modified. Otherwise, the hops are not as apparent as they should be for this amount.
