The wine collects in the bottle and may be re-added to the bulk of the wine or drunk as a reward for the bottler. Either way, very little wine is wasted.

You do not need to, the filler will stop flow at a level that you can pre-set using the collar around the filler tube. You may run into a leakage problem with this filler though as somehow, wine will start spurting from the small plastic tube on the top. This can be troublesome and I have not yet found a satisfactory work-around for this problem.
First, I do not "know" the answer to this question. But it would be so easy to test the idea. I would try it with water so that the inevitable mess would be easy to clean up. The you will be an expert on this topic.
The engineering in this thing is so extremely flawed, it is a sheer disgrace that this piece of crap is associated with the name Ferrari. Although the filler will stop at the top of the bottle, a ridiculous amount of wine is wasted spurting out the sides of the device as well as through the tube in the top. We took pictures and video, however, there does not appear to be a way to share here. It was measured that an average of 1.5 ounces per 750 mL bottle that we bottled was wasted, which comes to 3 1/2 gallons of wine for one 60 gallon barrel.
If you're using the method that somebody described to save the wasted wine, and either drink it later, or put it back in the barrel, that might work if you just have a small carboy that you're bottling. However, if you have a barrel, you'd better have a party ready to drink the wine. You wouldn't want to bottle that wine after all the oxygen exposure it has from spurting through the device and sitting exposed until you finish the bottling job.

Great Price but wears out fast
Works well until it doesn’t. This now is my backup bottle filler because after 2 vintages my previous one leaked. I replaced it as it is cheap but plan on replacing after 250 or so bottles.
These things leak like crazy, with wine spurting out the top through the air vent and through the red part as well. After having issues I looked online to see if it was user error, but seems like it is fairly well known that these are crap. So many bad reviews and issues across different sites and video. DO NOT BUY!
Saw a video, looked like a great product, did not read reviews, which are ok on this site, very poor comments on the others, just wonder why something that has been on the market so long can work so randomly, when it works, it's great! Then suddenly spurts out of vent or doesn't shut off, had 4 batches to bottle, this filler got retired after 1st batch, went back to the wand. Will investigate another option for a filler, it was great when it worked, but this one is useless.
I bought this thinking it would make bottling less messy....not so. When it works its pretty good bit it leaks the majority of the time. Yes it certainly shuts off flow to the bottle, but often diverts it to the siphon port on top so it bubbles out there instead. But sometimes if works flawlessly...wish I could know why
The Ferarri bottle filler lives up to its name, great for small batches of bottling. Easy to sterilize. Consistent fill levels. It really makes bottling small batches easy.
Not only does this thing leak like crazy, beer was shooting out of the top hose and it also pumped a bunch of air into the bottles causing the beer to foam. I tried using this on about my first 4 bottles and ditched it for my $5 spring-loaded racking cane which did a much better job.

It fills twice as fast and mostly to the correct level.
It fills twice as fast as my previous method with accuracy. The only problem is when the filling process creates bubbles which slightly trick the fill stopper mechanism, but this can be overcome with a bit of experience. Also you need to be sure to turn off the flow before you pull it out of the bottle, or it will keep flowing.
