Description

F08 Sour Batch is a combination of two Brettanomyces strains, Lactobacillus, and a low attenuating Belgian saison yeast. The blend is ideal for lambics, farmhouse ales, Flanders reds and any other beer you wanna get funky with.

  • Temp: 68-76°F, 20-24°C
  • Flocculation: Low
  • Attenuation: 80-95%
  • Alcohol Tolerance: 12%
  • Cell Count: 200 Billion

Usage Instructions:

  • ​Store refrigerated until ready to pitch
  • Shake and kneed pouch to homogenize slurry
  • Sanitize the sealed pouch
  • Open and pitch entire contents into well-aerated wort

Please Note: For best results we Always recommend ordering an Ice Pack with your liquid yeast. Ice Packs can be found below in the "You might Also Need" section.

Please Note: When choosing an ice pack option beware that the liquid yeast will not arrive cold even when shipped together. Ice packs and insulated mailing options are designed to keep the yeast colder for longer during shipment, but they will not ensure that your yeast arrives cold. We will not replace liquid yeast that arrives warm. During warmer months we strongly recommend you choose dry yeast.

Won't use it again
Pitched 2 packages into 10 gallons of well oxygenated 1.064 wort. No blow off activity even with temp into high 70's. s.g. hovering about 1.022 after 3 weeks. I hope it will drop further with more time. Taste is VERY tart, with a lot of underlying sweetness. Might make a good BBQ sauce, but not something I want to drink if it doesn't attenuate further.

Sorry to hear about your bad experience with this yeast blend. It is interesting that you've gotten tartness developed while still having so much residual sugar. A couple ways to salvage the batch would be to either add an additional pitch of brettanomyces and a healthy dose of patience or perhaps a powdered amylase enzyme to reduce the starches to sugars that the microbes can metabolise.

Nice aroma!
I can just drink this yeast. When I opened this pack, it smelled like a 3 year old aged geuze.
It’s still working on my beer so I can’t tell how good it is as of now. But I believe this might work out pretty good.

Wilds made Easy
Definitely recommended for those wanting to do wild beers without the uncertainty. My experience is this blend will make it start out young being mildly sour and mature into a horse blanket funky beer over the course of 4 months using a light wheat recipe. Flavor is good without being sharp or overwhelming.
