Does this bump up the alcohol content or does it not convert like other sugars?

BEST ANSWER: Added it late in the secondary like I usually do with cocoa nibs for more flavor don’t think adding it to the boil would bump the abv up much and the chocolate would be less noticeable

I have used the Cocoa Nibs, Blood Orange, Thai Ginger and the Maple Smokey Bacon. They all have had minimal impact (0-0.3%) on the alcohol content.

Yes it does. When I last looked into this I found it adds about 32 ppg to the overall gravity of the beer.

Use in Chocolate Stout

Used 1lb in a 5 gallon batch of Chocolate Stout. I did an open fermentation and added the syrup directly into the secondary fermenter. Chocolate flavor and aroma is present but not the main feature. I'm very pleased with the result!

I think up to 2lb could be used in a 5 gallon recipe if you really wanted to push the chocolate flavor.

Nice chocolate flavor.

I added this to a stout to add a chocolate flavor. It was a very nice addition to the beer. Prepare to add it to a hop sack when adding or you will have cocoa nibs floating in your beer.
