Description

Lambert variety cherry which has a black, crisp fruit with superb flavor.

Use one to two cans per 5-gallon batch of beer or mead. One can will give a slight flavor while two cans will produce a more pronounced fruit flavor. Because the product is sterile you can add directly to your fermenter for maximum flavor. There is no need to boil the puree. This product can also be used to make excellent fruit wines.

  • Brix: 19.0° – 26.0°
  • Viscosity: 10 – 20 cm/min (Bostwick at 70°F)
  • Color: Dark red, typical of Dark Sweet and Royal Anne Cherries

What's the shelf life of this product? How soon do I have to buy it before use?

BEST ANSWER: Honestly, I really don’t know the exact shelf life, but I purchased 20+ cans of different flavors, several of the dark cherry. I used a few to make some dessert porters and stouts, that came out really good; used them within several months after purchasing. I still have about 20 some cans left of different flavors that I haven’t used, as I got ahold of some fresh fruit, so used it first; as my opinion (and going off a brew shop I used to get supplies from before they closed recently), they cans have a fairly long and good shelf life. I’m not worried about having to use them to quickly, as it will probably take me several more years, easily to use all my cans. So in short , I say don’t worry, these can have can sit for many years (especially, if stored properly in a cool, no direct sunlight environment; my storage room has run between 37-80deg, mostly stays below 72, and generally in the 50’s to 60’s , and only a very few times up to 80deg in the last several years). I find that dark cherry has pretty good flavor and so you don’t need as many cans (depending upon how much flavor you want and what you’re making), compared to the strawberry or peach flavors. The raspberry is another that has good flavor and generally doesn’t need but 2-3, rather than 5-7 of strawberry or peach. I use these cans for beer and meads. So hope this helps.

Cheery puree
Used this in a batch of home made wine, 2 gallons of Catawba grape juice,one can of cherry puree and 4 oz package of cacao nibs and of course the sugar and let those little sugar alcoholics go to town making a cherry chocolate wine for Christmas, The ladies love this wine

used for chocolate cherry stout
Used two 49 oz cans for about 10 gallons and no cherry flavor. If I was to do again, I would probably do four 49 oz cans for 10 gallons of beer. At the very least three 49 oz cans for 10 gallons.

Great Product
I've used this in secondary for a cherry blonde ale. It takes a bit of time and rousing and I do a teriary to clear it out but the flavor is subtle but very evident.

Use this for my Chocolate Cherry Stout
Wife loves the Chocolate Cherry Stout I make with this. Don't care fore the flavoring bottles as they tend to give a funny taste to the beer, where this doesn't.

Use in a half batch
I split off 2.5 gallons of a batch of Irish Stout and added a can of this cherry puree in secondary. The result is a fantastic cherry stout with strong cherry notes that enhance the chocolate notes from the malt of the stout (no chocolate added). Imagine a bar of dark chocolate that has cherries in it (my favorite bar of chocolate)... that's what I got with this product! The cherry flavor is NOT tart, that would be a different product.

Great quality and easy to use
Brewed a cherry wheat with this and everyone loved it. Had some say they could not tell the difference between my and SamAdams. I will definitely use this again.

Makes awesome beer!
I added one can of this puree to a solid Dunkelweizen recipe and it added a great, subtle cherry taste to the end of the beer. Highly recommended! If you're looking for a more full cherry taste all the way through the beer, I might add 2 cans to secondary for a 5 gallon batch.
