The classic lager strain from Weihenstephan Germany that has been used for generations to produce clean, balanced lagers from pilsners to doppelbocks. Like all CellarScience yeast, GERMAN is eligible for direct pitch straight into your wort. CellarScience provides 12g of yeast per sachet, which is up to 9% more than any other brand of dry yeast. Every batch of yeast is PCR tested to ensure quality. GERMAN has been selling to pro breweries for awhile but was just recently packaged down to sachets for homebrewers.

Dosage:
Use at a rate of 12 grams per 5-6 gallons of wort.

Direct Pitch or Rehydrate:
GERMAN yeast can be direct pitched with great results by sprinkling it onto the surface of the wort in your fermenter. However, proper hydration helps ensure a healthy fermentation and is especially recommended for beer with a starting gravity above 15°P (1.061 SG). To hydrate yeast, first sanitize the yeast pack and a pair of scissors. Boil tap water to sterilize and then cool to 85-95°F (29-35°C). Use 10 grams (0.35 oz) of water per gram of yeast. Sprinkle the yeast onto the water, allow the slurry to stand undisturbed for 20 minutes, and then swirl. Use small amounts of wort to adjust the temperature of the slurry to within 10°F (6°C) of the wort temp before pitching. Ferment between 54-62°F (12-17°C).

CellarScience Yeast:

Faulty seal on two 500g packages
Didn't try the yeast. I ordered one 500g package--it was slightly soft to the touch on receipt. Put it in cold storage and a couple weeks later it obviously had a leak, package was floppy.

MoreBeer replaced it. Second package, repeat as above. Wasn't ready to brew so put it in cold storage. A few weeks later was ready to brew an floppy package. Had to scramble to get some yeast.

MoreBeer is refunding. I've stored bulk yeast before, bread and brewing yeast, never had this happen. And might not have noticed it if I used it on arrival. Think I'll wait awhile before trying Cellar Science again.

I brewed a Munich Helles and use this yeast. It did very well in the cold fermentation temperatures between 34-38 degrees and after a month the beer came out fantastic with an ABV of 6.4. I’m washing it and starting my own culture of it.

Hot Ferments The Same As W34/70
100% pilsner - 30 minute mash, 30 minute boil -- with current grains, DMS is a myth.
Fermented at 65* with no pressure and it was done in 5 days, raised temp to 70* for 2 days. Dropped crystal clear after 2.5 weeks in the keg with no finings added. This yeast is perfect for quick lagers at ale temps.

Great! Fast and clean fermentation on a large scale.
Pitched 2-500g packs into a 16bbl of 11P wort at 52F. Fermented out clean and fast. Cleaned it up at 63F with little diacetyl and sulphur production.
