The classic American ale strain that has a long history of producing amazing beers. Famous for its clean, neutral flavor and its ability to be used in any nearly any style. The reason this is the most popular strain in homebrewing and craft brewing is that it allows malt and hops to shine. You can never go wrong with CALI.  Like all CellarScience yeast, CALI is eligible for direct pitch straight into your wort. CellarScience provides 12g of yeast per sachet, which is up to 9% more than any other brand of dry yeast. Every batch of yeast is PCR tested to ensure quality. CALI has been selling to pro breweries for awhile but was just recently packaged down to sachets for homebrewers. 

One sachet is enough to treat a 5–6 gallon batch. When calculating for larger batches, use at a rate of 2–3 grams per gallon of wort. We recommend rounding up by one full sachet rather than measuring out the yeast exactly.

Direct Pitch or Rehydrate:
CALI yeast can be direct pitched with great results by sprinkling it onto the surface of the wort in your fermenter. However, proper hydration helps ensure a healthy fermentation and is especially recommended for beer with a starting gravity above 15°P (1.061 SG). To hydrate yeast, first sanitize the yeast pack and a pair of scissors. Boil tap water to sterilize and then cool to 85-95°F (29-35°C). Use 10 grams (0.35 oz) of water per gram of yeast. Sprinkle the yeast onto the water, allow the slurry to stand undisturbed for 20 minutes, and then swirl. Use small amounts of wort to adjust the temperature of the slurry to within 10°F (6°C) of the wort temp before pitching. Ferment between 59-72°F (15-22°C).

How do you tell from the code on the packet what the born date is of this yeast?

How many weeks in fermenter? 2 or 3? I used Cali Dry Yeast and have been fermenting at 67 degrees. Fermentation took off and was vigorous and seemed to finish after 3-4 days. OG was 1.062. Coming up on 2 weeks this weekend. I am wondering if I should raise the temp a bit or let it sit for longer. Thanks!

BEST ANSWER: This yeast usually finishes up a beer of this gravity in 10 days. A 4 day fermentation is fast but not worrying at 67 degrees. If the foam is gone and the yeast are sinking then they are done fermenting and you can start dry hopping. (Some belgian yeast strains truly limp over the finish line for 2-4 weeks.) Go ahead and take a sample and see how the beer tastes. We are looking for any buttery flavor or slick mouthfeel, and a stable final gravity. The Butter flavor is the last thing the yeast clean up before stopping fermentation and raising the temperature is a good way to help them finish this step. If the gravity is the same, say, on Thursday as it was Monday then you are 100% good to package, dry hop, or barrel that beer. Cheers!

Try to keep room temp at 69-72 but in Florida room can get to 74. Wort probably gets to 74-76. Anyone brewed warmer than 72?

I brewed a 10 gallon Chux 3-16 and SG was 1.068. I hydrated the Cali with Go Ferm protect and distilled water. Temps were 69. PH is 5.3. NO activity 3-16. I agitated by stirring. What are my options? I have never had no fermentation at this point in the process. Dead yeast?

BEST ANSWER: You should not use distilled water to rehydrate or make a starter, use regular tap water (boiled) or bottled water, I know it has been a while since you asked this question but the best thing to do when no fermentation is going on is to repitch yeast, cheers.
What is the expected attenuation with this yeast?

BEST ANSWER: What I like abut it, it's fast. Last time I used it: 1.063 @ 88°- 1.012 @75° in 3 days.
Where do I find the attenuation for all of the CellarScience yeasts (as a percent, not "well" or "medium"? I don't find it on the data sheets.

I am making a Goose Island Bourbon County Stout clone and will have an OG of around 1.140, I need to make sure this yeast will attenuate well with overpitching.

How big of a beer has this stuff fermented without stalling?

Out preformed the competition that cost twice as much. Cellar science brand is my new yeast.
Worked very well . Especially being half the price compared to white labs liquid . I definitely will be using this brand from now on. Wish I used it sooner would have saved a ton of money.

I always used liquid yeast (namely Wyeast 1056) but have found that the CellarScience "Cali" tastes just as good and give as good performance with a lot less hassle.

Unsuccessful fermentation 2/3 batches.
I've brewed at least 3 batches with the cali dry yeast that was saved in the fridge as backup for liquid yeast. The last 2 batches were under 1.065 and the wort was oxygenated well and pitching temps were in range. Even with hydration, fermentation would not start after 2 days including some wort agitation and warmed up wort to 75 degrees. The last batch
I pitched directly and oxygenated the wort even more and no bubbles after 2 days. Had to repitch both batches and am left a bit confused.

Great Yeast. Great Value.
I fermented a Cream Ale with Cali Ale yeast and it turned out perfect. Strong, healthy fermentation. Short lag phase compared to other dry yeasts I've tried. Did not rehydrate. I use yeast nutrient and oxygenate with O2 (even with dry yeast, although for only 15 seconds instead of 1 minute). The beer turned out great! Would absolutely recommend for any recipe where a neutral ale yeast is desired. Squeaky clean at 62F with a diacetyl rest at 70F for 48 hours.
