Chardonnay expresses itself differently where grown. Carneros offers some of the finest classic California Chardonnays. Rich and full-flavored with balanced acidity, the Santo Giordano and Tolay Springs Chardonnay are a wonderful representation.
Cooled by the San Pablo Bay and the cooling winds of the Petaluma Gap, Carneros is a great region for growing staindard Napa/Sonoma Chardonnay grapes. Chardonnay in a green skin grape that originated in the Burgundy wine region of eastern France. The grape itself is very neutral, deriving many of its flavors from oak and terroir. Chardonnay is one of the most widely planted grapes in the world with over 400,000 acres.
Tolay Springs is located near the San Pablo Bay in the Carneros AVA.

Yeast Recommendations

Below please find some notes associated with our recommended yeast strains for use with this fruit. It is important to note that any yeast will in fact perform the fermentation, however these strains have consistently performed well and produced flavors that our customers have been very happy with. To that end, the "correct" yeast strain is simply the one that sounds to you as though it will make the flavors that you are looking for in your wine.

You can add the yeast strain of your choice from the "You Might Also Need" section below. We also strongly recommend the use of the additive pack that you will see listed in this section as it will help enhance the quality of the wine you produce. Order one packet of yeast and one additive pack per pail of must or juice.

ICV-D47 - Complex white with citrus, dried apricot, pineapple and floral notes. Lees contact will give ripe spicy aromas and develop tropical and citrus tones, along with nuts. Adds volume and mouthfeel. Barrel fermentation and lees aging is recommended. Great as a single strain or as a blend.

CY3079 - Classic white burgundy with a rich, full mouthfeel, along with aromas of fresh butter, almonds, honey, white fruit, flowers and pineapple. Barrel fermentation and lees aging is recommended.

ICV-GRE - Brings fresh melon foreword along with good mouthfeel. Also effective for reducing herbaceous and vegetal notes in under-ripe fruit.

BEST ANSWER: Yes. This is just the frozen juice for the fermentation. For the other additives we have kits of everything you will need as BF995.
