I have never brewed without it so I can't say whether or not it makes brewing better or worse or easier or more difficult. I would not consider brewing without it. I do sometimes get some boil over through the hood at the start of the hot break and before adding hops but is easily controlled by spraying a water mist at the opening. The main advantage it has in my brewery is that it concentrates the steam effluent to a four inch opening and this makes it easy to direct it into my exhaust fan and thus keep condensation out of my brew room. I also think it allows a bit of reflux and improvement of the wort. I didn't consider using it as a funnel to pour grain through until I read some other reviews that were questioning the purpose of the hood. I am happy with it and will buy another when I get another braumeister.
I purchased one of these copper hoods after I had brewed about five batches of beer. I didn't feel I was getting a good enough boil going with the top open. This certainly solved the issue. Definitely a better boil when using the copper hood. As stated by Ken w above this is a functional addition.
Given the price tag, this piece is very nice. Very heavy duty, but also does help as a funnel for the grain, but it really does help with the boil. Don't expect a huge roiling boil, but there is a considerable improvement on my system. Hope this helps, Cheers!
