Description

Belle Saison is an ale yeast of Belgian origin selected for its ability to produce great Saison-style beer. It is a quick starter and a vigorous fermenter, and has a high attenuation and alcohol tolerance. Cooling is generally not used in this style of beer, temperature is allowed to rise through the course of fermentation aiding in the production of the fruity, peppery, and spicy characters you can expect from this yeast.

Best saison yeast; similar to DuPont strain but not nearly as finicky - starts fast and attenuates well.

A Beast of Yeast
I really love this yeast for a Saison, and a lot of times for not-saisons, too. If you ever have a ferment that seems to be stuck, try adding a half-cup or so of slurry from this yeast to give it a kick in the butt.

Great Saison yeast!
This yeast is great! It gave off all of the wonderful fruity, spicy, clove, banana, bubblegum Belgian esters you need for this style. It fermented great at a higher temperature (68-74F) at my house. Attenuated really well. Not much of a flocculator but that's okay, hazy is typical of this style. I'm sure it will settle out a bit while it's bottle conditioning. Overall, great yeast, if your making a Saison for this summer, I recommend this yeast.

Easy Saison Yeast
I've used this yeast twice to allow me to make beer through the hot D.C. summer in my only semi-climate controlled apartment and I would definitely recommend it.

After not being able to keep the temps down on a batch made with S-33 and ending up with something a bit *funky*, I decided that it was Saison season. Room temperature hovered around 80F all summer and both saisons turned out great with this yeast and had the profile that I was looking for.

Great fermenter!
Wanted to make a saison with harvested DuPont yeast. The starter seemed to be okay but when I pitched it no activity after two days. I had purchased this as a back up as this was my first harvested yeast brew and luckily I did. Quickly started ferment ting and the finished product is in my hand as I write this! Good. Get it.

Great for bottle conditioning
As a primary yeast it will take what seems like forever to flocculate. But you will definitely get a dry beer because of this. I use this dry yeast as a bottle conditioning yeast for all my saisons. The long shelf life makes it perfect for storage.

Great dried saison yeast
Great yeast for saisons and very convenient to have in dry yeast form.
Ferments very well at higher temps and doesn't stall like some other saison yeasts. Gives a really nice fruity ester profile with some clove and pepper spice similar to a lot of other Belgian yeasts. But it also has that nice tart, funky saison signature which I love.
I have made quite a few saisons with this. Even made a super saison at 8% with only one packet and it has no problem taking it down to 1.004, even with Oats and Carapils in the grist!
Ferments best at higher temps, I usually use it between 72-78F. I even let it go up to 85F last summer and it came out fantastically. None of the expected fusel alcohols, if was actually very nice.

Highly recommended to have on hand if nothing else. You never know when your liquid yeast might not be healthy and ready for pitching on brewday.

Good strain but not traditional flavors
2 packets for 5 gal. Started ferm @ 75F gradually raising to 86F over 3 days. Esters were more banana and little to no citrus. Spicy phenols were nearly non-existent. Probably better as a secondary yeast to help attenuation and create a drier beer.
