The most compelling stories always have a twist. Barebottle's award-winning Torcido is a Mexican pilsner with a German Helles twist. Combining these styles results in a light and refreshing lager that would make even M. Night Shyamalan do a double take. Originally developed by Barebottle brewer John "Magic" Montes De Oca, Torcido Torcido took gold in the International Pilsener category of the 2019 Great American Beer Fest and in turn became the inaugural inductee into the Viking Malt Hall of Fame. Brewed with Viking Pilsner, flaked corn, a dash of Carahell®, and hopped with two additions of Crystal and Saaz.

Barebottle Brewing Company was born in San Francisco, CA with the idea that craft brewing shouldn't adhere to the strict guidelines of established beer styles. Founded by a trio of friends and former classmates, they continue to pay homage to their homebrewing roots by printing a scaled down version of their recipe on every label. If you ever see one of their creations out in the wild, we highly recommend that you buy it, drink it, and then brew it!

Would this work with a higher temp yeast like California Lager yeast or San Francisco? Can’t think of the white labs numbers now...

Instructions don’t say how long to ferment and at what temps. Any help with that?

BEST ANSWER: I think it depends on your yeast. I used saflager 23, fermented it at the middle of their recommended range, 59 F, when fermentation was 3/4 done I did a diacetyl rest at 67 F. After fermentation was complete I dropped the temp to 32 F and let it lager for 2-3 weeks. It was delicious.

Very Good Mex Style Lager
Followed brewing instructions. Pressure ferment @ 68 with 34/70. Fermentation finished in 5 days. Transferred to Keg @ 14 days for lagering (35 degrees). Crystal clear by day 45. This is a very nice beer. It's well balance, no rough edges, smooth and has a nice flavorful finish. The ABV is well positioned for a Mexican Lager and nights on the patio. It's currently my favorite home brew lager.

Great first pressure ferment beer!
This recipe is soo soo delicious! Goes great on its own or with lime, or as a michelada. I don't have cold enough temps so I pressure fermented with 34/70, came out great
