Description

B56 Rustic is an out of the ordinary yeast that can be used in saisons, farmhouse ales, or other Belgian styles where high ester levels are key. B56 Rustic usually produces a lot of bubblegum and succulent aromas complimenting the complex maltiness of your beer.

Usage Instructions:
  • ​Store refrigerated until ready to pitch
  • Shake and kneed pouch to homogenize slurry
  • Sanitize the sealed pouch
  • Open and pitch entire contents into well-aerated wort

Makes an Excellent Farmhouse
I've done all my Farmhouse Ales with Wyeast but decided to give this one a try since I couldn't find the 3726 anywhere. Tasted after about 2 weeks and it was well on its way - subtle banana, lots of body. The only odd thing was this was the first beer I made that confounded the Tilt Hydrometer. The TIlt said the FG was 1.000 - filling me with dread over an infection. However, I filled an old fashioned hydrometer cylinder and it read 1.012. And it was clear from the flavors that there was no infection. Dropped in another Tilt, but it read 1.000 just like the other one. Strange, but I am looking forward to kegging and drinking the beer!

Great yeast
Gave me my best saison ever. Just beware; it may attenuate far more than what Imperial says. Mine got from 1.047 down to 1.004 - which I actually expected it would, as it is a diastaticus strain. That's 91 % attenuation.

Very reliable
Good activity out of the gate. Forgiving of temperature being a bit high. I've always liked Imperial Organic yeast for many years.

Bubblegum city. Solid saison yeast that works great in 70s. Supposed to be the same as wyeast 3726 (blaugies strain).

Bubblegum factory
I had a very vigorous ferment with this yeast with around 80% attenuation. Pleasant bubblegum aroma with a big bubblegum punch up front. Maybe just a hint of pepper at the very finish. Definitely great for a fairly clean saison or would even be a good candidate for a Belgian white beer.

Wonderful yeast
Made a tribute brew to Orlando with lots of orange and citrus flavors in the hops, as well as coriander and tangerine peel with very light maltiness. It added the needed sweetness both in taste and in aroma to temper such a bitter occasion.
