B44 Whiteout is perfect for Belgian Wit style beers, producing an excellent balance of spicy phenolic character and esters. Beside the necessary aromatics, Whiteout produces an impressive amount of acidity making it quintessential for wits as well as other light colored Belgian ales. Whiteout has shown to be flocculent during fermentation, then become non-flocculent towards the end, leading to a possible slow down of normal fermentation.

Usage Instructions:
  • ​Store refrigerated until ready to pitch
  • Shake and kneed pouch to homogenize slurry

I need to plan another beer for this yeast.
This yeast is a beast!
Similar to 3711, it takes off and chews the hell out of your short chain sugars.
Plan a couple of extra days in your fermentation schedule. I was brewing a beer where I wasn't looking for a lot of Belgian character, so I kept the ferm temp at 65. It was active for well over a week.

Whiteout a winner for me!
Used this strain with my Blood Orange Belgian Wit recipe. Great strain, an aggressive fermentation the first 48 hours. Kept the ferm temp near the higher recommended temp of 70-72F. From start to finish. Imperial claims this strain to slow towards the end but I did not experience this possibly since I did a starter and a yeast nutrient and higher ferm temp.
