The goal of the Ace venturi is to provide winemakers with an easy to use and clean tool that enables a large amount of air to be gently entrained into wine during pumpovers. This process allows oxygen to be introduced to the liquid, promoting yeast propagation and helping fermentation. The 3-piece Ace venturi device offers high performance and is simple to use, easy to clean, and inexpensive to purchase.  By utilizing a slightly customized stainless steel T-fitting as the structural housing of the device and designing the other parts to nest within that T-fitting, this product's price is far below that of its more complex competition.  The Ace was designed and assembled in the Napa Valley. 
 
‚ÄčThe Ace is made of a stainless steel Tee with FDA compliant cast urethane inserts.  Each venturi comes complete with one stainless steel T-fitting as well as the two venturi components necessary to assemble the device.  Assembly takes only a few seconds, and no custom gaskets or unique accessories are needed during the process -- just a couple of standard Tri-Clover gaskets and clamps to hook it up to your existing system!
 
How Does it Work?
  • Venturis work by fluid dynamic properties (Bernoulli effect). As juice is pumped through the venturi, it is forced through a small diameter opening (towards the center of the venture, at the air inlet) that increases the speed of the juice. That increased speed comes at the expense of decreased pressure, creating a low-pressure zone that suctions air or other fluid from the outside of the venturi
  • Venturis are a completely passive system: you just need to move juice through the venturi, and the laws of physics do the rest

Using the Ace Venturi:

  • Due to the fact that venturis operate as a passive process, they need to be as high on the fermentation system as possible so that no backflow occurs while they are inactive
  • Keeping the venturi at the highest point of your system also serves to decrease the amount of backpressure that the venturi is exposed to, which helps it to work most effectively
