Shaun is known for creating beers that are well-balanced while doing some unique things, such as using watermelon juice in a wheat beer, or oyster shells in an oatmeal stout. His Assistant brewer Jesse created this beer, an easy-drinking pale ale with few bittering hops but giant fistfuls of flavor and aroma hops. This beer has low alcohol and a soft malt backbone with an incredible hop finish - your answer to the hop shortage! Jesse and Shaun recommend using WLP001.

Shaun's brewing career started like most in the beer industry - homebrewing. While working at a Southern California law firm, Shaun was spending his time making beers at home. After about 2 years, he not only decided that he wanted to make beer for a living, but that he wanted to open his own place! Shaun moved up to the SF Bay Area to start working at a few local breweries, while taking several brewing courses at UC Davis. Shaun eventually teamed up with his business partner Nicco Freccia, and together, they founded the 21st Amendment Brewery and Restaurant. They are one of the few breweries in the country leading the craft beer canning revolution, canning their "Brew Free or Die" IPA, and their "Hell or High Watermelon", which is an American-style Wheat beer brewed with real watermelon juice. Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

Turned out great
This brew was really easy to follow. This was my first batch from More beer and I was impressed. I left in primary for a week and dry hopped for a week in secondary. This beer is my go to pale ale at the moment. Has nice hops and slight bitterness.

light crisp bitter ale
This is an excellent IPA type of ale. Easy drinking, well liked by a number of people who tried it. One person who tried said it was very close to the original (I have never tried it, so can't say). Would like to make this again.

Becoming a favorite
The second batch of this came out just as delightful as the first. I appreciate the combination of lower alcohol and great flavor. I've never had the original, but then again I am purchasing very few beers now that I am 25 batches into MoreBeer. I just got on to order a third kit. You can't go wrong at this price!

Great tasting but not the same
I brewed this kit and shared it with several other home brewers. We all love it but it did not come out the same as the real deal when we compared. The real Bitter American is more bitter and a great smack of hops to your taste buds. It is a great Session Ale.

one of the best American Bitters I've had!
My OG was really light for some reason, so I gave it a little bump with some corn sugar - and as a result I probably have a dry'er flavor than intended. Regardless - it yielded a really tasty session brew. Slightly sweet and malty when cold - the hops will really start to come out as it warms - typical of this style. As much as I liked it, the 90 minute boil was a bit tedious, and I prefer MoreBeer's ObSession kit (not a fair comparison really).

My favorite kit so far...
This beer turned out great! It's light amber-gold with a fizzy head. The hoppy bitterness coats the tongue and is the primary flavor, but it is not overpowering at all. My only addition was Cascade Thai Ginger Candi syrup that I added with 20 minutes left in the boil. This provided a tingling spiciness to the finish that was subtle, but definitely enhanced the flavor.

Very nice beer
I'll add my 5 star review to the others. I live in Florida and can only buy this beer in cans when I visit my daughter in NC. So I decided to brew my own. It turned out very well. After a week in the keg at 11 psi, my wife helped me do a blind taste test with the real thing (same serving temperature). I identified my home brew mainly because it tasted fresher and tastier, but it was very close. It's not super hoppy, but it's nice and bitter. And very close to the real thing.

My new favorite
Despite brewing for nearly 6 years now, this is my first bitter. What an excellent brew. the kit resulted in a pale brew with beautiful hop aroma and strong but not over powering bitter taste. I have only had it in the bottle for 2 weeks, but already it is a great session beer. Highly recommended!

The Real Thing!!!
I live in Arizona and we can't get 21st Amendment beers here. But when I was introduced to them while traveling to California and Minnesota, I was amazed at just how fantastic Bitter American is. Granted, it's been a little while since I've cracked a can of the real stuff, but the beer brewed with this kit is everything I remember! Mine came out around 4.7%, very hop-forward, sweet nose from the malt and the west coast hops. I love this beer and will be ordering again.
