Total Acidity Testing
Testing the total acidity or TA for short in wine or must is important because along with a wines pH, the TA us if the wine will likely be in balance with itself. It also tell us how much the pH can be adjusted if needed and how well the wine will age over time.
Whether using our CellarScience Acid test kit or if you’re something else, the principles behind TA testing are the same. You will use Sodium Hydroxide (a base) to neutralize the acidity of a fixed sample size of wine or must, one drop at a time. When a pH of 8.2 is reached all of the acid will have been neutralized. Then based on how many drops of Sodium Hydroxide used, you can then calculate the amount of acid that was in the sample.
