Description

  • 3787 produces a nice balance of complex fruity esters and phenolics, making it desirable for use in other Belgian style ales as well
  • A classic Abbey strain for brewing Belgian dubbel or Belgian tripel
  • Activator Smack-Pack System™ "proofs" the yeast and shortens lag time when it hits your wort
  • When smacked, the Activator™ packet releases sugars and nutrients to initiate the culture's metabolism
  • Wyeast has been a pioneer in craft brewing for over 35 years and is committed to creating the finest fermentation products available
  • Although beneficial, cultures do not need to be activated prior to inoculation

A classic strain for Belgian Dubbel or Tripel. Produces a balance of complex fruity esters and phenolics, which can be manipulated with fermentation temperature. A true top cropping yeast (additional headspace is recommended), that will work over a broad temperature range. 3787 is a wonderful Belgian-style house strain.

Dead Yeast
This is the last time I will use Wyeast. I've been brewing for years and always used White labs yeast. I ordered this by mistake and it was a mistake. Followed the directions and it's been 30 hours and no activity. So I'll spend more money at the local brew shop to get a tube of reputable White labs yeast.

Great growth and activity in the starter ~36 hours prior to pitch. Took off like an animal upon pitch, lots of blowout within 24-36 hours and bubbling away

Use Blow Off Tube
I have used this yeast twice this year, once for a 2.5 gallon batch of Tripel, brewed in July, and then bottle conditioned 4 months. It was a 10% ABV monster with lovely spicy phenolic yeast notes, grain bill, and hop additions were kept very simple to really let the yeast shine, and this turned into a favorite recipe I will be sure to repeat, it nailed Westmalle character. The other is a 5 gallon batch of Dubbel with holiday spices that will be getting kegged later this week and is currently in the fermenter. For both beers I made a starter the night before pitching, and in less than 24 hours after pitching, the yeast was at the top of the fermenter. Both times I barely caught it in time to make a makeshift blow-off tube, next time I'll set it up form the start. The Tripel started at 1.086 and fermented down to 1.008, and the Dubbel started at 1.070 and fermented down 1.012.This yeast flavorful, reliable, and aggressive, I would recommend this yeast all day everyday for any Belgian styles, and especially Abbey styles. Once last thing: before racking, cold crash your beer after fermentation completes, otherwise this yeast will stay in suspension. I would say the "medium" flocculation is a very low medium.

Trappist 3787
This is a very consistent Belgian yeast for high alcohol brews such as tripel and dark strong. This yeast gets off to a strong & quick start and ferments down to low gravity numbers. I have used this yeast many times and am very pleased. Provides some very good phenols as well and has that distinct Belgian flavor depending on the fermentation temperature you choose.

This is my favorite for all around belg. Beers. best with less age. Some of these belg. yeast need the age to get that right flavor. Not this one. Tripels, dubbel in a month, boom drinky drinkie
