An extremely malty beer that really emphasizes malt over hops. Most styles are more balanced, which means the bitterness of the hops is proportional to the sweetness of the malt. Not true with our Scotch ale where the deep malt flavor is king. Scotch Ale yeast strains typically ferment well in the low-to-mid 60's and leave behind very few esters or fruity flavors, which further emphasizes the malt. This recipe has over 11 lbs of malt extract and only one ounce of hops!

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

I just purchased the scotch ale kit and a pack of wlp028 yeast should I use more yeast? Some have mentioned slow yeast activity and with the high OG, just trying to head off any issues. New to this and excited for this awesome ale....

BEST ANSWER: Generally, when the beer is expected to be at or over 6% ABV, it's best to use at least 2 packets of yeast or make a yeast starter.

One of our favorites
We have brewed this twice. The first time, we added 4oz. Breiss cherry wood smoked malt. Finished at 9.17% abv. Boozy, but great! Second time, we used 3oz. smoked peat. Finished at 8.12% abv. We liked the first one better. The cherry wood smoke made it a little sweeter.

This ale is easy to make, but it has a very lively fermentation and you definitely need a blow off tube. ( This should be mentioned and explained in the instructions.)

Tasty Scotch Ale
I'm a huge fan of Scotch Ales, with a brewery only a few miles away from me making one of my favorites. This was only my 2nd beer, but I figured I'd give it a shot.
I only hit one problem: The GY044 Scotch Ale #1 Yeast I'd ordered had to be shipped from the east coast (I'm in CA), and even though it arrived on a cold day and I kept it in the fridge, the pouch never expanded when it came time to brew. But not knowing if this was good or bad I pitched it anyway. 3 days later, no fermentation. I contacted MoreBeer support, and they overnighted me a new packet free of charge which I pitched the next day, to some immediate aggressive fermentation. After that it was smooth sailing, with the final beer coming in at 8.1%. Nice and sweet\malty\smoky, goes down really easy only two weeks since I cracked the first bottle. Good carbonation, nice head. Can see doing this again with some tweaks to the recipe. 5 stars for a great beer, and great MoreBeer support.

Awesome Scotch Ale
Well I thought I would be able to put some of this up for long term ageing, but it didn't last everyone loved this scotch ale. It ended with a 8.6% ABV, but was very smooth with a great mouthfeel. Very enjoyable to even sip at a small juice glass full. Would highly recommend this one, I have another kit on the way.

Great, non-hoppy beer!
This was only my third brew but it came out really well; my favorite so far. I'm not a fan of hoppy beers and this one is definitely not hoppy. Good flavor and very potent!

I got this kit as gift awhile back and brewed it in june. Its now August and I am really pleased with the way it has turned out. This beer is very malty so just FYI. It reminded me of McEwans scotch ale which I think is really tasty. If you like strong malty beers this one will definitely please. I doubled up on the yeast since this is quite a high gravity beer. Let it sit a couple weeks in the bottle. Its fine at 2 weeks carbonated but 4 weeks is perfect.

Good, malty, needs complexity
I like the basic recipe, but feel the need to modify it. I add some chocolate malt and a cup of molasses; then it really is tasty! Make sure you use a starter, it is fairly high OG and the yeast need the help. I've fermented it at low and high temps (59deg to 70deg) with WLP028 and always had good results; it conditions beautifully and ages nicely as well; a 2-yr bottle was wonderful.

Excellent, complex, slow to carbonate
This resulted in a great, complex brew nearly 10pct above. Recommend a yeast starter with alcohol tolerant yeast as the abv is high. My batch was slow to carbonate, which I attribute to the yeast and no starter. After about 6 mo, this beer was amazing... Complex, smooth and delicious. Tasted like an aged vintage ale, will age well.
