BEST ANSWER: I only used the 6 lb bag. The beers I've made turned out great. It's a better value than the can. I recommend the 6 lb bag. Have fun brewing!
If using RO water, would I adjust my water similarly to all drain with gypsum and CaCl? Or does the extract already contain minerals? I'm brewing an american barleywine where usually I shoot for SO4 = 200 & Ca = 100 & Cl = 50

BEST ANSWER: I am not an expert brewer but I have a few successfully made batches of both Ales and Lagers made with this extract. I normally use Springwater which includes a lot of minerals already. More Beers Extracts doesn't have a specific ingrediens label on it but most malt extracts however, normally contains protein, essential amino acids, soluble fibers, vitamins B2, B3 and B6, the minerals iron, calcium and potassium and the micro-minerals magnesium, manganese and selenium.

I usually dont overthink the water mineral or calcium content for this reason and doesn't adjust anything based on the water quality since I am using "clean" water.

Mostly directed for mashes but I tend to apply the same principles for extract brewing as well, the content if the minerals etc still exists in mash brews.

what are the mineral levels of the extract? (Ca Mg SO4 Na Cl)

How do you know the salt additions necessary to hit target water profiles? Assume distilled or RO water is used. I'm looking to brew a hoppy American barelywine (1.090 OG) and shooting for 120ppm SO4 & 40ppm Cl)

Excellent flavor & fermentation
Every batch of homebrew I concoct always has fast & quality fermentation. I used this in a European Pils HME and the flavor was enhanced over pale LME. This LME is always fresh every rime I purchase it from MoreBeer. Salud

Super malty
I used this syrup in a pale ale recipe and it rounded out the malt profile very nicely. Worked well on waffles as well!

Hold on, gotta take another swig...
Kegged my first extract beer after doing all grains for awhile, used this Munich LME with some steeping grains and all I can say is "very nice". It's causing an internal struggle with me however in that on one hand it's cool to make your own wort from grain itself but on the other hand the beer can apparently be just as good without the water salts/mash temp/pH/etc PITA (pain...). I've not used other extract brands so I cannot attest to MoreBeer's extract vs. xyz's but then again I see no reason to get it anywhere else...
