Julian (known as Saco de Torro on the MoreBeer forum) has a reputation of brewing well-balanced beers. After confirming this during Club Night at the NHC, we knew Julian was just right for our Signature Series kits. Julian has been homebrewing for 13 years, starting in college brewing extract kits. When he bought his house about 5.5 years ago, he dove into all-grain brewing and hasn't looked back.In addition to his homebrewing, Julian guest brews at Pizza Port, in Carlsbad ... "While a newer patron to Pizza Port, I often saw Jeff Bagby brewing. He was always eager to talk about beer and share techniques. About two years ago they offered me the chance to brew my imperial stout at their Solana Beach location. It was a great experience for all of us and it stoked the opportunity for me to brew more of my beers at their other locations, which was a tremendous honor. Last year I was even able to do 25bbls of my imperial pilsner through Port's production brewery in San Marcos. That beer, Panzer, went over so well with the public that Tomme decided to bump up this year's batch size(s). We did 125bbls in June that should be hitting the shelves and draft accounts soon, with more to come in September. They are one of the most generous groups of people I've ever met."
Julian recommends using White Labs WLP380 for this beer.
